We believe that our employees are our most important resource and our success depends upon creating and retaining a staff capable of delivering an exceptional dining experience to every customer, every time.oInspect and clean, and maintain food preparation areas, such as equipment and work surfaces, or serving areas to ensure safe and sanitary food-handling practices.oClean and sanitize work station area including tables, shelves, walls grills, broilers, fryers, pasta cookers, saut burners, convection oven, flat top range and refrigeration equipment.oStore food in designated containers and storage areas to prevent spoilage.oPrepare a variety of foods, such as meats, vegetables, or desserts, according to customers' orders or supervisors' instructions, following approved procedures in broilers, ovens, grills, fryers and a variety of other kitchen equipment.oTake and record temperature of food and food storage areas, such as refrigerators and freezers.oWash, peel, and cut various foods, such as fruits and vegetables, to prepare for cooking or serving.oPlace food trays over food warmers for immediate service, or store them in refrigerated storage cabinets.oPortion according to standard portion sizes and recipe specifications and wrap the food, or place it directly on plates for service to guests.oEnsure food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, fryers, roasters, and other kitchen equipment.oEnsure freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock.oMix ingredients for green salads, molded fruit salads, vegetable salads, and pasta salads.oReceive and store food supplies, equipment, and utensils in refrigerators, cupboards, and other storage areas.oRemove trash and clean kitchen garbage containers.oPerform cleaning duties, such as sweeping and mopping floors, vacuuming carpet, tidying up service areas, taking out trash, or checking and cleaning bathroom.oUse manual or electric appliances to clean, peel, slice, and trim foods.oPromptly inform Owner when equipment is not working properly and when food and supplies are getting low, and order needed items.oUnderstand and comply consistently with the restaurant's standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.oUses the Standard Recipe Card for preparing all products; does not rely on the memory of oneself or others.oComplete opening and closing checklists and assists others in opening and closing the kitchen.oResponsible for the quality of products served.oStocks and maintains sufficient levels of food products at line stations to support a smooth service period.oHandles, stores, and rotates all food products and supplies according to restaurant policies and procedures.oTurn or stir foods to ensure even cooking.oSeason and cook food according to recipes or personal judgment and experience.oBake, roast, broil, and steam meats, fish, vegetables, and other foods.oWeigh, measure, and mix ingredients according to recipes or personal judgment, using var ious kitchen utensils and equipment.oPortion, arrange, and garnish food, according to standard portion sizes and recipe specifications and serve food to servers or guests.oObserve and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.oFollow proper plate presentation and garnish set up for all dishes.oWash, peel, cut, and seed fruits and vegetables to prepare them for consumption.oCarve and trim meats such as beef, ham, and pork for hot or cold service, or for sandwiches.oAssists in food prep assignments during off-peak periods as needed.oSubstitute for or assist other cooks during emergencies or rush periods.oAttend all scheduled employee meetings and offers suggestions for improvement.oCoordinate with and assist fellow employees to meet guests' needs and support the operation of the restaurant.oFill-in for fellow employees where needed to ensure guest service standards and efficient operations.SupplementaloConsult with supervisory staff to plan menus, taking into consideration factors such as costs and special event needs.oKeep records of quantities of food used.oLoad dishes, glasses, and tableware into dishwashing machines.oDistribute food to servers to serve to customersoStock cupboards and refrigerators, and tend salad bars and buffet meals.oEstimate expected
