May perform the following duties at any time but not limited to:
Perform duties that require proficiency in special procedures and a broad knowledge of
service operations, such as food preparation, dishwashing, dry and refrigerated storage, and
food and beverage serving. Review and process or prepare tray slips for faxed
meals. Run nourishment labels, check diet changes for early and late trays, prepare slips for
outpatients, run back-up copies for tray tickets and nourishment, remove NPO's and assist
in food preparation as needed. Check telephone messages and assist in the main kitchen as
directed by higher graded employee and/or food service supervisor. Prepare individual and
bulk nourishment and special feedings for patients. Follow directions in assembling,
measuring, weighing, or mixing ingredients for basic formulas and other supplemental
feedings. Weigh and measure food items and recipe ingredients, using portion
control scales and measuring devices to apportion individual items according to standardized
recipes. Assemble, label, and arrange completed recipe items in preparation for use by cooks. Incumbent may use a
computer terminal to record and retrieve recipe, menu, and inventory data and to produce
printouts of such information for various work units in the kitchen. May open and/or pan bulk
food items for use on the tray line.
Skill and Knowledge.
Knowledge and skill in planning and organizing work to complete assignments. Knowledge
of special procedures and sanitation principles necessary in the preparation of tube feedings
to prevent bacterial contamination. Demonstrated skill in making precise measurements and
accurately weighing recipe ingredients for special feedings. Knowledge of proper techniques
for measuring the volume of dry, liquid, and fat ingredients and in the use of portion control
scales. Skill in arithmetical computations using decimals, fractions, and percentages to
determine the quantities of ingredients needed to prepare the required yields. Knowledge of
recipe construction, and skill in measuring and weighing ingredients to adjust recipe yields
according to standard procedures. Thorough knowledge of basic modified diets when
providing the final check on patient trays to verify that the food items are correct for the

PHYSICAL EFFORT AND WORK CONDITIONS: The duties of this position require light-to-moderate physical effort. Work may involve constant standing; frequent walking; repeated bending/stooping; pushing/pulling and lifting; reaching or moving objects weighing up to 40 pounds unassisted and must be able to lift/carry up to 45 pounds with the assistance of other workers. Carts pushed by employee may weigh between 450-475 pounds and require up to 25 pounds of force to push. Must be able to push heavy pieces of equipment, such as loaded carts, over long distances. Correct lifting and body mechanic techniques must always be used. The employee must understand and enforce all safety and sanitation procedures to lower-grade employees (i.e. lock-out/tag-out and floor mat placement procedures). They must be familiar with all emergency codes and give guidance to patients and staff while keeping safety in mind.
